Grilled Chile-Lime Chicken Breast or Tofu

Any time you can cook outside, it's a good day.  These flavorful chicken breasts will be loved and devoured by the whole family.  As my friend Aimee recommended, this recipe works equally well for tofu.  Marinating and grilling tofu gives it an amazing flavor and texture.

The Art of Good Food Chile-Lime Dressing Mix (prepared per package directions)

4 boneless, skinless chicken breasts ( or 4 thick slices of tofu)



1. Rinse, trim, and pat dry the chicken breasts ( or tofu).

2. Place the chicken (or tofu) in a covered bowl and add just enough of The Art of Good Food's Chile-Lime dressing to cover the pieces.

3. Put the bowl into the refrigerator and allow to marinate for up to 24 hours.  (It works fine if you just leave them for a couple of hours too.) Stir or turn the pieces several times during the marinating to make sure all sides are getting equal attention.

4. Fire up the grill and grill the breasts (or tofu) until they are done completely through or to 185 degrees.

5. Remove from the grill and serve immediately with a wedge of lime, some rice or pasta, and a crisp romaine salad with more of The Art of Good Food's Chile-Lime Salad Dressing.
